Sandwich shop celebrating all things mustard opens during pandemic

COLORADO SPRINGS — Colonel Mustard's Sandwich Emporium opened in July of 2020 and, thanks to overwhelming community support, is continuing to operate and look ahead to the future. It's a future that celebrates all things mustard.

The unique Colorado Springs sandwich shop features a menu that utilizes a large number of ingredients purchased from other businesses local to Colorado and also boasts an amazingly diverse array of mustards for sale and for taste testing.

While the sheer number of mustard varieties is impressive and unique by itself, it could be argued that the most singular item for sale is mustard ice cream.

According to Karrie Williams and her husband Mark Jakusovszky, this interesting juxtaposition of sweet and spicy has baffled, intrigued, and delighted a number of guests.

"I've made about 70 batches since we opened in like six months," stated Karrie.

The small shop, a dream for the couple for at least five years now, is intended to be so much more than just a place to grab a bite.

These proprietors hope to turn their sandwich and mustard venue into a place where people will want to stop and stay a spell.

"My biggest hope for this place right now," said Mark, "is that it becomes a place where people can come and hangout."

They hope in the future to be able to host community dinners, fundraisers for good causes, cribbage tournaments, and possibly even Clue-based "whodunnit" mystery parties.

Currently the sandwich shop is not open for dine-in service (but is offering online, phone ahead, and curbside services), with the exception of private mustard tastings, but the plan is to open their lobby back up when El Paso County returns to level yellow.

"So that's been the hardest, not being able to have folks come in as we'd all hoped," said Karrie, "but we'll get through this!"

Both Karrie and Mark firmly believe that the generosity and overwhelming support from the community is what has allowed their dream to not only survive, but look to the future as well.
