PUEBLO — Like most restaurants, a new eatery in Pueblo is adapting to operating in a world dominated by COVID-19.
Chelsey's in downtown Pueblo opened on March 13 with a full staff. A few days later, the city closed all in house dining.
The closure meant the owners had to let go of most of their workers.
They're now operating with just three people and said that though it's a scary time for a new restaurant, they are remaining optimistic.
"It's been a dream of ours to have a restaurant and a bar and we were only able to do it for two days. Just waiting for the time to end so we can open up again," said owner, Chepelle Hawks.
The restaurant is currently offering take out and delivery.
